Jennifer's Spicy Chicken Soup

Ingredients
1 whole chicken, cooked and chopped into chunks, reserve broth
6 cups chicken broth
2 cans diced tomatoes, Mexican style
1 can whole corn, drained
1 can diced green chiles
1 onion, diced
1 tablespoon oil
1 bunch of cilantro
2 jalapenos, seeded and diced
4 packets True Lime (more to taste)
cumin, salt and pepper to taste

Directions
1. Boil chicken in 3 quarts water until cooked and tender.
2. Remove chicken from pot, debone and chop into chunks.
3. Strain the remaining stock and set aside.
4. Cut jalapeno peppers in half and remove seeds. Dice peppers. Dice onion.
5. Heat 1 Tbsp oil in skillet and add onions and jalapeno. Cook until soft.
6. Heat 6 cups of chicken stock in a large pot.
7. Add chicken, pepper and onion mixture,corn, tomatoes, cilantro, green chiles, 4 packets True Lime.
8. Heat to a boil and cook until cilantro is cooked down.
9. Add salt, pepper and cumin. Be generous with the cumin because that is what gives it its spicy flavor.
