    Low Cal Lemon Refrigerator Cookies

    Description

    Delicious low calorie cookies. Bonus: prepare them ahead and bake when you are ready!

    Ingredients

    3 packets True Lemon
    3 tablespoons warm water
    1 cup butter, room temperature
    1 cup baking Splenda
    2 eggs
    11/2 teaspoon vanilla extract
    21/2 cups sifted all-purpose flour
    11/2 teaspoon baking powder
    1/2 teaspoon of No Salt

    Directions

    1. Dissolve True Lemon packets in warm water and set aside.
    2. Cream butter, Splenda, and eggs with electric mixer until light and fluffy. Blend in vanilla and True Lemon mixture.
    3. Sift flour, baking powder and salt together. Add to lemon mixture.
    4. Form dough into 2x6 inch logs, seal in plastic wrap, and refrigerate overnight.
    5. Preheat oven to 285 F. Cut dough into .5 inch slices and space 2 inches apart on greased cookie sheet. Bake for 16-20 minutes.
    6. Allow to cool for 5 minutes before transferring to cooling racks.
    7. Dust with powdered sugar if desired.

    I'm thinking a True Orange version of this would be tasty, too. Maybe dipped in dark chocolate. (So much for the low calorie thing, though.)
