Summer Artichoke Soup

Ingredients
2 tablespoons butter
1/4 cup chopped red onions
1 1/2 cups vegetable stock
1 can artichoke hearts (quartered), with liquid reserved
3 packets True Lemon
2 tablespoons water
2 tablespoons cornstarch
1 1/2 cups half & half

Directions
1. Melt butter in saucepan over medium heat; once hot, add chopped onion and cook until transleucent.
2. Then add broth, 1/2 the artichokes, and 1/4 of the artichoke liquid and boil.
3. In another mixing bowl, whisk True Lemon, water and cornstarch together so there are no lumps.
4. Add mixture into boiling pot, then return to a boil for an additional 3 minutes.
5. Then remove from heat, add in half & half and remaining artichokes.
6. Add salt and pepper to taste and serve hot or cold.
