True Lemon Onion Topped Green Beans

Mmmmm, yes! Finally an adult update of the traditional Thanksgiving green beans! Easy and appealing, this dish kicks its shabby canned-onion cousin to the curb.Ingredients
1/2 pound fresh green beans or haricots verts
1/2 pound yellow beans
3 packets True Lemon
pinch sea salt
1/4 cup olive oil
1 tsp fresh thyme or 1/2 tsp dried
freshly ground black pepper
1/2 cup chopped toasted walnuts
1/4 cup crumbled goat cheese
Medimu red onion, sliced 1/4 inch/medium thick
1/2 pound yellow beans
3 packets True Lemon
pinch sea salt
1/4 cup olive oil
1 tsp fresh thyme or 1/2 tsp dried
freshly ground black pepper
1/2 cup chopped toasted walnuts
1/4 cup crumbled goat cheese
Medimu red onion, sliced 1/4 inch/medium thick
Directions
Clean and trim the beans. Blanch them in a pot of salted water, then shock them in cold water and set aside.
Caramelize sliced onions in a pan or spread in a shallow baking pan and broil under high heat, turning once until lightly browned. Keep warm.
In a large bowl, combine the olive oil, True Lemon, and thyme with a pinch of sea salt and freshly ground black pepper. Toss the beans in the dressing and sprinkle with the toasted walnuts and crumbled goat cheese. Toss again, top with onion and serve immediately.
