    True Lemon Spicy Cottage Cheese Baked Potatoes

    Description

    Low fat and nutritious, this topped baked potato is fall favorite that reheats easily for make ahead meals or a True-ly satifisying cold-day lunch.

    Ingredients

    6 medium potatoes, scrubbed clean
    12 oz.  low-fat cottage cheese
    2 tsp tomato paste
    3 packets True Lemon
    1/2 tsp ground coriander
    1/2 - 1 tsp red pepper flakes (1/2 tsp for mildly spicy, 1 tsp for medium spicy)
    4 tbs minced green onion
    1 tbs extra-virgin olive oil
    3 tbs water
    salt and pepper to taste

    optional: salad greens

    Directions

    Preheat the oven to 350 degrees F.

    Pat dry the scrubbed potatoes and cut a slit lengthwise in the top. Prick the sides lightly with a fork and wrap in foil. Bake until tender, about 45-50 minutes.

    In a medium pan, heat the olive oil and lightly sautee the green onions. Add the water and tomato paste to the sautee, and cook one minute. Remove from heat and add all the remaining ingredients, mixing thoughly.

    Unwrap the potatoes and top with cottage cheese mixture. Serve on a bed of salad greens if desired.
