True Lime Cilantro Rice

Description
This zesty rice is one of the jewels of Mexican cuisine.
Ingredients
1 cup long grain white rice
Coarse salt
1/2 cup fresh cilantro
4 packets of True Lime
1 tablespoon olive oil
1 garlic clove

Directions
1. In a medium saucepan, bring 1 1/2 cups water to a boil.
2. Add rice and 1/4 teaspoon salt; cover, and reduce to a simmer. Cook until water is absorbed and rice is just tender (about 16 to 18 minutes).
3. Meanwhile, in a blender or food processor, combine cilantro, True Lime, oil, garlic, and 2 tablespoons water; blend until smooth.
4. Stir into cooked rice, and fluff with a fork.
