Truly Fresh Chicken and Rice Salad

Description
Cook extra rice the day before so you'll be ready to whip up this delicious, nutritious meal. Use the suggested veggies or whichever you have on hand.
Ingredients
1 tsp true lemon
1 c spring peas - cooked & chilled
2 c brown rice - cooked & chilled
black pepper
fresh cliantro
1/4 c onion - diced
1/2 c mushrooms - diced
1/2 c carrots - shreaded
Italian dressing to taste
1 head romaine lettuce - cut for salad
Directions
1. Season chicken breasts liberally with black pepper and true lemon & grill or pan sear.
2. Cut into bite sized pieces.
3. Toss together peas, rice, cilantro, onion, mushrooms, and carrots.
4. Season with just enough italian dressing of your choice to be moist without being liquidy.
To Serve: Put a layer of lettuce on plate, add a scoop of the rice & veggie mixture, then add the chicken on top. For an extra treat, serve with True Lemon & Garlic dinner biscuits.
